There's a little too much fat on a ribeye for me. I'm more of a porterhouse or sirloin strip kinda guy. But you sure are cooking it right. Hot grill (I use charcoal), charred on the outside, red center. Steak should be about 1 1/2 - 2' thick to get it right. Man I love a good steak off the grill. Have to settle for chicken breast off the grill tonight with a big salad, cider vinegar and olive oil. Will be eating in about a half hour. I'm hungry!Had a beautiful ribeye last night...hot grill ..it flamed beautifully for the 9 min it was on the grill came out with a sweet char and a beautiful pink middle
